Pumpkin Free Fall Overnight Oats
Overnight oats are the perfect breakfast for a busy morning! I love meal prepping them the previous night, that way the next morning all I have to do is pour my oats into a bowl and top them or on really busy mornings just eat them out of the jar/ container. In honor of it officially being fall I thought it was only fair to make this overnight oats recipe have a fun fall twist. Fall is without a doubt my favorite season not only because of the fall themed food but the beautiful weather as well. I personally love pumpkin but I know it is not everyones cup of tea so I decided to make these Autumn Overnight Oats completely pumpkin free. Despite being pumpkin free this recipe still tastes like fall in a bowl!

Pumpkin Free Fall Overnight Oats
Ingredients
For your container/ jar:
- 1/4 cup oats (I used Bob's Red Mill Gluten Free Rolled Oats)
- 1/2 tsp cinnamon
- a pinch of salt
- 1-2 tbsp walnuts
- 1 tbsp unsalted pumpkin seeds
- 2 dates (pitted and chopped)
- 1/4 apple (chopped or shredded)
- 2 tsp maple syrup (optional if you prefer your oats sweeter)
- 1/4 cup greek yogurt (Siggi's is the best!!)
- 1/2-3/4 cup milk of choice (base of the consistency you prefer)
Toppings
- 1/4 apple
- cinnamon (to taste)
- hemp seeds (optional)
Instructions
- In a mason jar or container add in all of the ingredients listed above (oats, cinnamon, salt, walnuts, pumpkin seeds, dates and apples.)
- Lastly add in your maple syrup (optional), greek yogurt and milk, then stir or shake your oats.
- Place in your refrigerator overnight or for a minimum of 4+ hours.
- In the morning pour your oats into a bowl and add your favorite toppings, I like using some more apple as well as some cinnamon and hemp seeds.
